Colombia Huila #073671
(Colombia Huila Excelso E/P) The association of coffee producers "Los Naranjos" is the quintessential example of small-parcel Colombian coffee culture. This high-caliber group of 52 farmers have produced some of the highest quality coffee that we have seen come out of Huila. The sharing of techniques and practices between this group of producers is one of the most important factors in the progress of this association, and with an average farm size of4 hectares, the success of the group is absolutely contingent upon the discipline of the individual. This coffee is harvested at full-ripeness, fully washed, and patio/parabolic dried to ensure a cup that is equally bright, fruity and complex with a soft and sweet body. NOTES: DARK CHOCOLATE/DARK CHERRY/MILD ORANGE-Roast MED+

Brazilian Legender #035561
This coffee is sourced from Fazenda Floresta. A family owned farm operating in the state of Bahia, Brazil near the Chapada Diamantina National Park, known for its mountainous cliff formations (chapada) and 19th century diamond mining (diamantina). Coffee is biodynamically cultivated, which is a holistic approach to agriculture where the farm is managed as an interconnected organism that generates its own fertility through diverse cover-cropping and the integration of manure from livestock raised on the farm. Biodynamic goes beyond organic practices including applications of homeopathically treated compost based on the rhythms of nature. NOTES: GRAHAM CRACKER/CHOCOLATE COVERED ALMOND-Roast-MED+

Mexico Natural Decaf #083053
Mexico Natural Decaf - Esmeralda. This coffee is decaffeinated naturally  using Ethyl Acetate (EA). EA is a naturally occurring organic compound found in fruits and vegetables that is synthesized for coffee decaffeination and 100% organic/natural. In this method the green beans are steamed or soaked to expand the beans for caffeine extraction. The expanded beans are then soaked in EA, which bonds with the caffeine molecules and breaks them away from the bean. The decaffeinated coffee is then removed from the EA solvent and rinsed thoroughly. BINGO has chosen this Decaf Coffee for exceptional flavor and aroma, so if a decaffeinated brew is your choice, this roast will truly excite your taste-buds! Ethiopia Yirgacheffe #083675
This coffee comes from a single farmer in the Chelchele area, part of the Gedeb district in southern Gedeo Zone, where some of Ethiopia’s most complex and aromatic naturals come from year after year. Gedeb is a unique area dense with coffee growers and processors. The farmer, Wako Jigsu, was born and raised in Chelchele. Gedeb's Significance and Coffee Profiles The district of Gedeb takes up the south-eastern corner of Ethiopia’s Gedeo Zone—a narrow section of plateau dense with savvy farmers whose coffee is known as “Yirgacheffe”, after the zone’s most famous district. Gedeb, however, is a terroir, history, and community all its own that merits unique designation in our eyes. Coffees from this community, much closer to Guji Zone than the rest of Yirgacheffe, are often the most explosive cup profiles we see from anywhere in Ethiopia. Naturals tend to have perfume-like volatiles, and fully washed lots are often sparklingly clean and fruit candy-like in structure. The municipality of Gedeb itself is a is a bustling outpost that links commerce between the Guji and Gedeo Zones, with an expansive network of processing stations who buy cherry from across zone borders. These processors (and we would agree) would argue their coffee profiles are not exactly Yirgacheffe, but something of their own. The communities surrounding Gedeb reach some of the highest growing elevations for coffee in the world and are a truly enchanting part of the long drive into Guji. Banko Gotiti is one

Colombia Narino #073675
Ever stop to think about all the variables that factor into creating a distinct, complex, clean and consistent regional blend? It is mind boggling if you think about the terroir to processing and everything in between. And what about the human factor from farm management all the way through to brewing. But if you think about it, the backbone of Colombian offerings are regional blends cultivated in many parts on small family-owned farms. It’s hard to pinpoint why some regional blends rise to the top each year but it sure is exciting when they do. This traceable community blend with a vibrant regional profile comes from an association called Ecoterra SAS, which has 117 members with small farms in the Department of Nariño. This particular lot comes from producers in the communities of la Union, San Pedro de Cartago, Arboleda and San Lorenzo, who have 1-acre farms. Each producer has their own micro-mill where they carefully harvest cherries, depulp, ferment, wash and gently dry the parchment on raised beds. Imagine the harmony between these producers in farm management and post-harvest practices to achieve a clean and consistent blend. But also, just enough differences from farm to farm to create a rich complexity of flavors. An export company called Mastercol provides crucial logistical support for things like warehousing and milling coffee for export to the international market, which provides better income for everyone to NOTES: HONEY/POMEGRANATE/BLACKTEA/CARAMEL-Roast MED+
